At Dekanozishvili Winery, we craft unique wines that tell the story of Georgia’s ancient winemaking heritage, infused with a passion for innovation. Founded in 2015 by Giorgi Dekanozishvili, a third-generation winemaker, this family-run winery is nestled in the heart of Georgia’s winemaking region Kakheti, in Sagarejo area. Here, we honor tradition while embracing novelty. Giorgi’s vision was clear from the start: to create a distinctive wine built on the rich legacy of Georgian winemaking while exploiting new ways to elevate the craft. By blending the artisanal methods of qvevri winemaking—Georgia’s ancient tradition of fermenting wine in clay vessels—with the appassimento method, Giorgi created something truly unique. Wine

Dekanozishvili Winery’s philosophy is to craft distinctive wines by blending the traditional techniques of qvevri fermentation and appassimento, creating innovative expressions Georgia’s rich winemaking heritage.

Our flagship red blend, a masterful expression of Manavi’s terroir, showcases the artistry of three noble Georgian grape varieties: Saperavi, Otskhanuri Sapere, and Shavkapito. Each grape is handpicked with care from our vineyards and exhibit distinct characteristics, creating a wine that is dense, powerful, yet elegant and rounded. Saperavi brings intensity and backbone to the blend, Shavkapito delivers elegance and floral lift while Otskhanuri Sapere joins in with vibrant acidity.

Inspired by the Italian appassimento method, we dry these grapes for three months in a specially designed building, concentrating their flavors to unlock profound depth and complexity. This process infuses the wine with rich, velvety notes, setting the stage for our unique approach to winemaking. True to our roots, fermentation takes place in traditional Georgian qvevri—clay vessels buried underground—where the grapes ferment for about one month. The wine then rests on its skins for an additional six months, absorbing subtle tannins and vibrant aromas, before being transferred to clean qvevri for seven months of undisturbed maturation.

To refine its character, Dekanozishvili Red matures for 18 months in French and American oak barrels — each imparting distinct nuances of spice, vanilla, and cigar box. After this careful aging, the grapes are expertly blended and bottled, resulting in a wine that balances power and elegance. Expect a symphony of dark fruit and berries, prune, dried fig, vanilla, roasted nut, warm spice and tobacco, with a silky texture and a lingering finish that tells the story of our past and future.

Vineyards

Nestled in the heart of Kakheti, our vineyard in Tokhliauri, Sagarejo, lies at 650 meters above sea level, where the southwestern slopes of the Gombori Ridge meet the timeless beauty of Georgia’s wine country. 

The soils of Manavi micro zone are a mosaic of Kakheti’s geological past, blending alluvial-carbonate and clay-limestone deposits. These diverse soils, enriched by the region’s moderate continental climate, contribute to distinctive minerality, structure, and finesse of our grapes.


Our vineyards are of mixed age: Average age of Saperavi vines is 20 years, as for Otskhanuri Sapere and Shavkapito, they are relatively younger. 

We feel privileged to preserve an ancestral 0.5-hectare Saperavi vineyard from the last century, ensuring its precious grapes contribute to the distinctive character of Dekanozishvili Red.

We honor the land through sustainable practices, preserving the legacy of our older Saperavi vines while nurturing our new plantings.
